Cheesy Sausage and Sun-dried Tomato Bites

makes approximately 48 bites

1 box Triscuit Brown Rice Tomato & Sweet Basil Crackers
1 (8 ounce) package shredded mozzarella cheese
1 pound hot Italian sausage
¼ cup chopped sun-dried tomatoes, packed in oil
4 large eggs
½ cup milk
olive oil spray
6 slices Provolone cheese, cut into 1/8ths

Preheat oven to 350°F.

Remove casings from sausage and cook until browned, in a skillet over medium-high heat.

Prepare 2 mini muffin tins with olive oil spray.  Set aside.

Meanwhile, crush Triscuit in a blender or food processor until you have a crumb mixture.  Alternately you can smash them in a plastic bag using a mallet.

In a large mixing bowl combine all ingredients.  Stir until well combined.  Add mixture to pans, about 1 ½ tablespoons in each cup.  Press mixture into pan.

Bake 15-20 minutes until bites are lightly browned.  Set cheese on top of each bite.  Allow to cool in pan for 5 minutes.  Serve and enjoy!
