Fudgy Walnut Black Bean Brownies

makes 16 mini brownies (or 9 large)
1 (15 ounce) can black beans, drained and rinsed well
3 tablespoons unsweetened cocoa powder (or raw cacao powder)
1/2 cup old-fashioned oats
1/4 teaspoon kosher salt
1/3 cup pure maple syrup
2 packets stevia
1/4 cup coconut oil
1 tablespoon pure vanilla extract
1/2 teaspoon baking powder
1 cup chopped walnuts, divided

 Preheat oven to 350°F.  Prepare an 8x8 baking pan with coconut oil.

Combine all ingredients except the walnuts in a food processor or high powered blender. Blend until smooth.   Fold in ½ walnuts. 

Pour into prepared pan.  Sprinkle remaining nuts on top. 

Bake 15-18 minutes until cooked through.  Remove pan from the oven, set on a cooling rack for 10 minutes. 

Serve and enjoy!
