Banana Split Ice Cream Popsicles

serves approximately 12-14 popsicles

3 bananas (2 ripe and one fresh)
2 cups vanilla ice cream, softened
14 medium strawberries, washed and chopped
14 maraschino cherries (1 per popsicle)
1 recipe homemade magic shell
1 cup salted roasted peanuts, chopped

Chop fresh banana.  Set aside.

In a large bowl smash 2 ripe bananas with a fork.  Add chopped banana and ice cream.  Stir to combine. Add strawberries, fold into mixture.

Add 1 cherry to the bottom of each popsicle mold.  Pour ice cream mixture into molds.  Cover and place sticks into the mold.  Freeze for 12 hours.

Spread chopped peanuts across a shallow plate.  Dip popsicles into homemade magic shell (in a tall, thin glass or canning jar) and then immediately place on peanuts.  Flip and place on a cookie sheet and freeze or serve immediately.

Cooks Note:  I store these in sandwich bags until ready to eat to keep them fresh in the freezer.
