Crunchy Caramel Peanut Butter Popcorn

2 (3.5 ounce) packages microwave popcorn, popped
¾ cup brown sugar
½ cup unsalted butter
½ cup crunchy peanut butter
6 ounces marshmallows
kosher salt

Preheat oven to 300°F.  Line a baking sheet with parchment paper.  Set aside. 

Pour popcorn into a large bowl.  In a microwave safe bowl combine butter, brown sugar, and marshmallows. Cook 1 minute at a time in the microwave, stirring between cook times, until the mixture is melted and smooth. Stir in the peanut butter until well blended. Pour the caramel peanut butter mixture over the popcorn, and stir to coat the popcorn before it cools.

Bake 15 minutes (until crunchy) and sprinkle with salt.  Serve and enjoy!
