3 cups rolled oats
½ cup brown sugar
2 teaspoons cinnamon
2 teaspoons baking powder
1 teaspoon salt
¼ cup unsalted butter, melted
1 teaspoon vanilla extract
1 ½ cups milk
1 cup dried cranberries
½ cup toasted walnuts, finely chopped
Preheat oven to 350°.
In a large bowl, whisk together oats, brown sugar, cinnamon, baking powder, and salt. Set aside. (If you are making this the night before, wrap this bowl and leave it on the counter).
In a separate bowl beat milk, eggs, melted butter, and vanilla extract. (If you are making this the night before cover and refrigerate).
Pour wet ingredients into dry and whisk well. Stir in dried cranberries and walnuts. Spread into a 8”x8” greased baking dish. Bake for 30-35 minutes. Remove from oven and serve. This is great with a little milk poured over the top too!
